Stone Fruit and Tomato Salad
Here’s a really simple but beautiful looking seasonal salad – I made it as part of the Christmas spread and it looks great on the table!
8 heirloom or Kumato tomatoes
Ricotta or fetta, crumbled
1 Tbsp red wine vinegar
Pinch of sea salt flakes and black pepper
2 Tbsp extra virgin olive oil
Make the dressing by placing the ingredients into a small jar with lid and shake to combine.
Cut fruit into wedges and tomatoes into rounds and arrange in salad dish with basil then scatter ricotta or feta on top.
