Chicken and Herb Meatball Soup
This is a nice simple recipe with simple flavours. I’m not generally a soup fan, but occasionally, I do feel like a big bowl of something hot and hearty. This is great for a cold wintry night and/or when you’re feeling a bit under the weather. If you have the time, make your own chicken stock, but otherwise just buy the pre-made stuff.
Meatballs
500g chicken mince
2 large garlic cloves, finely chopped
4 Tbsp chopped flat leaf parsley
2 Tbsp chopped fresh basil
1 egg
Fresh bread crumbs from 1 slice bread
Sea salt to taste
Soup
1 Tbsp olive oil
1 medium onion, chopped
2 carrots, diced
1 large stick celery, diced
1.5 litres chicken stock (homemade if you have time, or purchased)
Fresh corn kernels from 3 super sweet corn cobs
200g green beans cut into 1cm pieces
Finely grated lemon Zest to garnish
Method
Mix all meatball ingredients and roll into balls, set aside.
Heat oil and cook onion, garlic, carrot and celery for around 5 mins. Add stock, bring to boil then simmer for 10 minutes.
Add corn and beans and simmer 2 mins.
Add meatballs carefully and simmer for 3-4 mins until balls are just cooked through and they float on the surface.
Serve garnished with more parsley and lemon zest.
