Thai Pork Balls
This is an absolute cracker of a recipe. Every time I cook these for people I get asked for the recipe – so much so that I always have photocopies on hand! You can substitute the pork mince for chicken mince if you prefer. The lime rind plus the fresh herbs is what makes these great. However, don’t try to go all healthy and get low fat mince – if you do, you’ll have dry balls – and no one wants those!
INGREDIENTS:
500g pork mince
1 egg lightly beaten
1/2 cup fresh white breadcrumbs
Half a brown onion, finely diced
3 Tbsp chopped canned water chestnuts
3 Tbsp chopped fresh mint
3 Tbsp chopped fresh coriander
2 tsp finely grated lime rind
1 Tbsp fish sauce
2 Tsbp sweet chilli sauce
Extra:
1/4 cup sweet chilli sauce (extra)
2 medium Lebanese cucumbers
METHOD:
Pre heat oven to 200 degrees. Place ingredients in a large bowl and mix thoroughly. Roll into heaped Tbsp balls and place on lightly oiled oven tray. Bake for approx. 20 minutes. While still warm, brush the balls with the extra sweet chilli sauce. Place on sliced cucumber rounds and serve.
I love these – they are good as leftovers for breakfast too!
